Oriental Mujadara with Lentils and Rice – Simple & Hearty

recipe.header.titleBig

Oriental Mujadara is a true comfort food that always delights me as a little cooking cat. This combination of nutritious lentils and rice, topped with a generous portion of perfectly caramelized fried onions, is a classic of Levantine cuisine. Mujadara is not only healthy and wonderfully satisfying, but also extremely quick to make once you get the hang of it. What makes this dish so special to me is the interplay of earthy lentils and sweet, crispy onions – a flavor explosion that needs no frills. All you need are fresh, natural ingredients and a little love when preparing the onions. Today, I'll show you how to easily conjure up this vegetarian highlight in your own kitchen. It's the perfect dish for a cozy evening when you want to treat yourself to something special that warms both body and soul. Grab a pan and let's bring this aromatic comfort food to the table together!

Ingredients

Mountain lentils
80  g
Basmati rice
80  g
Onion
2
Olive oil
30  ml
Cumin
1  tsp
Vegetable broth
300  ml

Preparation

1

Slice the onions (2) into thin half-moons and fry them slowly in a pan with some olive oil (30 ml) over medium heat until golden brown and crispy, then set aside.

2

Rinse the mountain lentils (80 g) thoroughly and bring them to a boil in a pot with the basmati rice (80 g), vegetable broth (300 ml), and cumin (1 tsp).

3

Reduce the heat and let the mixture simmer gently, covered, for about 20 minutes until the liquid has been completely absorbed by the lentils (80 g) and rice (80 g).

4

Gently fluff the lentil-rice mixture with a fork and arrange it on a plate.

5

To finish, generously distribute the crispy onions (2) over the dish and serve – meow, simply delicious!
