Ingredients

Pork roast with rind
300  g
Potatoes
250  g
Sugar
30  g
Butter
20  g
Salt
1  tsp
Bay leaf

Preparation

Preheat the oven to 200 degrees and score the rind of the pork roast (300 g) in a diamond pattern with a sharp knife, without cutting into the meat.

Rub the rind generously with salt (1 tsp) so that it becomes wonderfully crispy later – that's my little pro-tip for you!

Place the bay leaf (1) into the baking dish, pour in water (100 ml), and roast the meat for about 50 minutes until the rind is golden brown and crispy.

While the roast is resting, peel the boiled potatoes (250 g).

Melt the sugar (30 g) in a pan over medium heat until it caramelizes to a light brown color.

Add the butter (20 g) to the pan with the sugar and toss the potatoes (250 g) in it until they are coated all around with the golden caramel.

Serve the crispy roast together with the sweet potatoes on a plate and enjoy your Danish delicacy!
