First, separate the eggs (2) and beat the egg whites until stiff. Meow, that adds extra air to the dough!
In a bowl, mix flour (150 g), sugar (20 g), baking powder (1 tsp), and a pinch of cardamom (1 pinch) well.
Whisk the egg yolks (2) with the milk (200 ml) and stir into the dry ingredients until a smooth batter forms.
Melt the butter (30 g) and carefully fold it into the batter, then gently fold in the egg whites (2).
Grease the special pancake ball pan, fill the batter into the wells, and bake over medium heat.
As soon as the bottom is golden brown, turn the balls with a knitting needle or wooden skewer so they cook evenly.
Dust the finished Æbleskiver with powdered sugar (20 g) and serve warm with a dollop of strawberry jam (50 g).
