Peel the onion (3), cut into fine rings and caramelize until golden brown in the butter (20 g) over medium heat – this takes some patience!
Dust the flour (10 g) over the onions and sauté briefly while stirring.
Pour in the vegetable broth (400 ml) and let the soup simmer gently for about 15 minutes.
Meanwhile, lightly toast the baguette (2 slices) and finely grate the Gruyère cheese (50 g).
Pour the soup into an ovenproof dish, top with the bread slices and spread the cheese over them.
Bake in a preheated oven using the grill function until the cheese is golden brown and beautifully melted.
