Cut the potatoes (2) into thin sticks and fry in olive oil (20 ml) until golden brown and crispy, then season with a little salt (5 g).
For the Café de Paris butter, thoroughly mix the room-temperature butter (50 g) with the finely chopped parsley (10 g), the pressed garlic (1), and a pinch of salt (5 g).
Season the entrecôte (200 g) with salt (5 g) and sear over high heat in a hot pan on both sides until the desired level of doneness is reached.
Remove the steak from the heat and immediately place a piece of the prepared herb butter (50 g) on top so it can slowly melt into the meat.
Arrange the entrecôte (200 g) on a plate together with the homemade French fries (2) and serve.
