Chorizo al Vino – Classic Spanish Tapas, simple & quick

Looking for the perfect taste of Spain at home? Chorizo al Vino is a hearty classic, featuring chorizo braised in bold red wine. As a cat with a penchant for Iberian cuisine, I especially love this dish because it is wonderfully uncomplicated and fills the kitchen with a marvelous aroma. You take a spicy sausage, refine it with fruity wine notes, and end up with a delicious tapas specialty rounded off by fresh white bread for dipping. It is the ideal soul food for a cozy evening when you want to feel just like you're in a Spanish bodega. Preparation is child's play and guaranteed to succeed, even when you don't feel like standing at the stove for hours. Since I place great value on fresh and authentic ingredients, we avoid pre-packaged goods completely and focus on the quality of the sausage and a good wine. Grab your favorite bread and enjoy this rustic taste experience that makes every bite a small journey. It's quick to make, healthy in the sense that it brings happiness, and simply a must for all fans of Mediterranean cuisine.
Ingredients
Preparation
First, cut the chorizo (150 g) into slices about one centimeter thick; make sure they are not too thin so they stay juicy.
Finely dice the garlic clove (1) while heating the olive oil (10 ml) in a small pan over medium heat.
Add the chorizo slices (150 g) to the pan and sear them briefly on both sides until they release their bright red oil.
Now briefly toss in the garlic (1) until it smells wonderful, but be careful not to let it turn brown!
Deglaze everything with the red wine (100 ml) and let it simmer over medium heat for a few minutes until the liquid turns into a shiny syrup.
Finally, tear or cut the white bread (100 g) into coarse pieces to soak up the delicious red wine sauce.
