Fabada Asturiana - Hearty Bean Stew with Chorizo & Bacon

Looking for real soul food for cold days? My Fabada Asturiana is just right for you! This traditional Spanish bean stew from Asturias is an absolute classic, featuring a combination of creamy white beans, spicy chorizo, savory morcilla, and tender bacon. As a little hobby cook with paws, I love this dish because it’s simple but offers a true explosion of flavor. It's healthy, filling, and, thanks to fresh, high-quality ingredients, a real experience in your own kitchen. Although the stew often simmers for a long time in Spain, I'll show you how to prepare this hearty meal easily and with lots of love. Grab your wooden spoon and let’s bring this Spanish classic to your kitchen – perfect as a hearty main dish that warms you from the inside and makes you happy. Have fun cooking, meow!
Ingredients
Preparation
Soak the large white beans (200 g) in plenty of water overnight, then drain and rinse.
Finely dice the onion (1) and the garlic clove (2) and sauté in a pot with the olive oil (1 tbsp) until translucent.
Cut the streaky bacon (100 g) into coarse pieces and sauté briefly, while I purr curiously.
Now add the soaked beans (200 g) to the pot along with the chorizo (100 g) and the morcilla (80 g).
Pour in the water (500 ml) so that the ingredients are well covered, and bring to a brief boil.
Reduce the heat and simmer the stew gently until the beans are soft and creamy, adding a pinch of salt (1 pinch).
Finally, remove the sausages, slice them, and return them to the stew just before serving.
