Wash the Pimientos de Padrón (200 g) thoroughly under cold water and pat them very dry with a kitchen towel so they don't splatter too much in the pan later – meow, that's important for a clean kitchen!
Heat the extra virgin olive oil (2 tbsp) in a pan over high heat until it shimmers slightly.
Add the dried Pimientos de Padrón (200 g) to the hot oil and sauté for about 5 to 7 minutes until the skin blisters and turns slightly dark brown in some places.
