For the aioli, whip the egg (1) with a pressed garlic clove (3), lemon juice (1 tbsp), and a dash of olive oil (30 ml) until creamy, then set aside.
Toast the fideos (100 g) in a pan without fat until golden brown, then remove.
Add the remaining olive oil (30 ml) to the pan, and sauté two finely chopped garlic cloves (3) and the grated tomato (1) briefly.
Briefly sear the prawns (100 g) and seafood mix (100 g), then remove from the pan.
Pour the fish stock (250 ml) with saffron (1 pinch) into the pan and bring to a boil.
Add the toasted fideos (100 g) to the broth and simmer until the liquid is almost completely absorbed.
Finally, spread the prawns (100 g) and seafood mix (100 g) on top, let them cook through briefly, then serve with the homemade aioli.
