First, cut the whole grain bread (50 g) into small, even cubes.
Finely grate the parmesan (30 g) and mince the garlic clove (1) very finely.
Heat some olive oil (20 ml) in a pan and toast the bread cubes until golden brown. Just before finishing, sprinkle half of the parmesan (30 g) over them so it melts slightly.
For the dressing, stir the Greek yogurt (100 g) until smooth with the lemon juice (0.5) and the remaining garlic (1).
Halve the romaine lettuce (1) lengthwise and brush the cut surfaces with the remaining olive oil (20 ml).
Sear the lettuce halves in a hot grill pan for about two minutes until they have light grill marks.
Arrange the grilled lettuce on a plate, drizzle generously with the yogurt dressing, and sprinkle with the homemade parmesan croutons (50 g).
