Wash the arugula (50 g) thoroughly, spin it dry, and place it directly into a nice salad bowl.
Toast the pine nuts (15 g) in a small pan without fat over medium heat until golden brown – but be careful, they darken quickly, purr!
Halve the peach (1), remove the stone, and cut it into nice wedges.
Heat some olive oil (2 tbsp) in a grill pan and sear the peach (1) wedges briefly on both sides until they have nice grill marks.
For the dressing, mix the remaining olive oil (2 tbsp) with the white balsamic vinegar (1 tbsp) and the pinch of sea salt (1 pinch) in a cup.
Place the warm peach (1) wedges on the arugula (50 g), drizzle everything with the dressing, and sprinkle the salad with the toasted pine nuts (15 g).
