Cook the mountain lentils (80 g) in plenty of water until al dente, then drain and rinse briefly with cold water so they keep their structure.
While the lentils are cooling, slice the radishes (5) thinly and dice the cucumber (0.5).
Cut the spring onion (1) into fine rings and finely chop the fresh parsley (5 g).
For the dressing, whisk together the olive oil (20 ml), apple cider vinegar (10 ml), and mustard (10 g) in a small bowl until creamy.
