Preparation

Boil the floury potato (250 g), peel, press through a potato ricer, and let it steam dry briefly.

Knead the flour (75 g) and the egg yolk (1) into the potato mass until a smooth dough forms.

Form the dough into a roll, cut into small pieces, and shape into gnocchi. Cook in boiling salted water until they float on the surface.

Meanwhile, let the butter (30 g) foam in a pan.

Add the sage leaves (10) to the butter and fry until crispy.

Add the juice of the lemon (0.5) over the sage and gently toss the cooked gnocchi in the pan.

Finally, grate the fresh parmesan (20 g) over the top and serve immediately. A little paw-tip: Do not use too much flour so the gnocchi remain nice and fluffy!
