Salmon fillet

Preparation

Rinse the salmon fillet (200 g) under cold water, pat dry, and cut into about three-centimeter cubes – watch out for any bones; I like them as a cat, but you certainly don't want them in your food!

For the marinade, thoroughly wash the lime (1), finely zest it, and squeeze the juice.

Peel the ginger (10 g) and grate it very finely so it unfolds its full aroma.

In a small bowl, whisk the olive oil (20 ml) with the lime zest, lime juice, grated ginger, and sea salt (2 g) into an aromatic emulsion.

Carefully toss the salmon cubes with the marinade and let them soak for a moment while the grill or pan heats up.

Now, thread the marinated pieces onto a skewer and grill over medium heat for about three minutes on each side until the salmon is tender and translucent.
