Ingredients

Bulgur
60  g
Vegetable broth
120  ml
Pomegranate seeds
50  g
Flat-leaf parsley
1
Lemon
0.5
Olive oil
1  tbsp

Preparation

1

Pour boiling vegetable broth (120 ml) over the bulgur (60 g) and let it sit covered for about 10 minutes until soft – a little pro tip: don't stir too much so it stays fluffy!

2

Meanwhile, wash the flat-leaf parsley (1) thoroughly, shake it dry, and chop finely.

3

Fluff the swelled bulgur with a fork and transfer to a bowl.

4

Fold the fresh pomegranate seeds (50 g) and the chopped parsley (1) into the bulgur.

5

Whisk a fine dressing from the lemon juice (0.5) and the olive oil (1 tbsp) and carefully mix it into the salad.

6

Toss everything well and let it sit briefly before enjoying your homemade creation!
