For the dough, quickly knead the flour (150 g), cold butter (100 g), part of the ground almonds (30 g), and some sugar (40 g) into a smooth dough and refrigerate briefly.

Wash the peaches (2), pit and slice them into thin wedges, then gently mix in a bowl with the remaining sugar (40 g) and lemon juice (1 EL).

Roll out the dough on a floured surface into a circle and sprinkle the remaining ground almonds (30 g) in the center, leaving a border of about three centimeters.

Distribute the peaches (2) decoratively on the almonds and fold the free dough edge inwards over the fruit, letting the little kitchen cat ensure the edge doesn't look too perfect, as that's exactly what gives a galette its rustic look.

Brush the edge of the dough with a beaten egg (1) so it gets a golden-brown color in the oven.

Bake the galette at 180 degrees for about 30 minutes until the crust smells wonderful and the fruits are soft.
