This heavenly coconut mousse with tropical mango coulis is my absolute favorite dessert when I long for sun and vacation. As a home cook with a flair for sweet treats, I love the combination of the airy, light coconut cream and the intensely fruity taste of a ripe mango. Carefully open the chilled coconut milk (200 ml) and separate the solid coconut cream from the liquid.

Whip the solid cream with the maple syrup (20 ml) in a bowl with a whisk until creamy and light.

For the fruity coulis, peel the mango (1), remove the pit, and puree finely in a blender along with the lime juice (5 ml).

Pour the coconut mousse into a nice glass and carefully top with the smooth layer of mango puree.
