Wash the rhubarb (2) thoroughly, trim the ends and cut into small pieces.
Simmer the rhubarb (2) in a small saucepan with a splash of water until it breaks down.


Let the cooked rhubarb (2) cool down briefly.
Stir the Greek yogurt (150 g) in a bowl with the honey (20 g) and the vanilla extract (1 tsp) until smooth.


Fold the soft rhubarb (2) into the yogurt mixture to create a nice pattern.
Fill the mixture into popsicle molds and freeze for at least 4 hours until the popsicles are firm.
