For the dough, quickly process flour (150 g), cold butter (100 g), and part of the sugar (30 g) into a smooth dough, then chill briefly.
Roll out the dough into a circle on a floured surface and place the fresh blueberries (200) in the center, leaving a border free.


Sprinkle the berries with the remaining sugar (30 g) and the fine lemon zest (1).
Loosely fold the edge of the dough over the berries, leaving the center open so the pastry looks rustic.


Brush the edge of the dough with a beaten egg (1) so it gets a beautiful golden-yellow color when baked.
Bake the galette at 200 degrees for about 25 minutes until golden brown and crispy.
