

Turkish Pide Flatbread with Sesame and Nigella Seeds - Simple & Original

A freshly baked, airy Turkish Pide flatbread with sesame and nigella seeds is the absolute highlight for any moment of indulgence. It is wonderfully easy to make yourself, without unnecessary additives, using only the best ingredients you likely already have at home. The combination of aromatic nigella seeds and nutty sesame gives the bread its characteristic touch, usually only found in the best bakeries. It is wonderfully fluffy on the inside and gets a great crust due to the high heat. Preparation

Place the flour (200 g) into a bowl and press a small well into the center.
Add the dry yeast (5 g) together with the sugar (5 g) and the lukewarm water (125 ml) into the well, stir briefly and let rest for 10 minutes until slightly foamy – this activates the little helpers for a fluffy dough.


Add salt (5 g) and olive oil (10 g) and knead everything into a smooth, supple dough.
Cover the dough and let it rise in a warm place for about 45 minutes, until it has doubled in volume. Don't be impatient, my paws always get excited too!


Preheat the oven to 220 degrees Celsius.
Shape the dough on a floured surface into a flat round and place it on a baking sheet.


Use your fingers to press a nice diamond pattern into the dough, without piercing it all the way through.
Whisk the egg yolk (1) and brush the flatbread with it, then evenly sprinkle with sesame seeds (5 g) and nigella seeds (5 g).


Bake the Pide for about 12 to 15 minutes until golden brown and enjoy it while warm.
