

Braised Lamb Shank in a Rich Red Wine and Fig Sauce - Tender & Gourmet

Meow! If you ask me, there is nothing better than a braised lamb shank in a rich red wine and fig sauce that is so tender it falls off the bone. As a little gourmet cat, I love the combination of hearty, intense meat and the gentle sweetness of the figs. This dish is my absolute favorite for cozy evenings when you want to treat yourself to something special. The preparation might sound like a big task at first, but don't worry: you just need a little patience while it braises. The rest happens almost by itself while the flavors meld into a wonderful liaison in the pan. I promise you, the result tastes like it's straight out of a starred restaurant, only much cozier in your own kitchen. Grab your favorite dishes, because this delicious feast is not only healthy, but also a real experience for the palate. Everything is freshly prepared, without any fuss, just the way I like it!
Ingredients
Preparation

First, rub the lamb shank (1) with a little salt and pepper and sear it vigorously all over in hot olive oil (20 g) until it has a beautiful golden brown color.
Finely dice the onion (1), carrot (1), and garlic clove (1) and add them to the pan with the meat to let their flavors develop.


Now deglaze the whole thing with red wine (150 ml) – it hisses so beautifully, I have to prick my ears as a cat! – and add the beef stock (200 ml) as well as the rosemary sprig (1).
Halve the dried figs (3) and add them to the sauce as well.


Let everything braise gently over low heat with the lid closed for about 90 minutes, until the meat is wonderfully tender.
Finally, remove the rosemary sprig (1) and, if necessary, let the sauce reduce a little more until it is nice and creamy. Enjoy your meal!
